Controversially, ripening avocados in a box, pallet, or lot without an external source of ethylene will result in uneven ripeness or “checkerboarding.” Uneven ripeness can cause problems, as some of the fruit may be too ripe or too green for a customer who buys it.
How do you get an avocado to ripen evenly?
Avocados do not ripen on the tree; they ripen or “soften” after they have been harvested. To speed up the avocado ripening process we recommend placing unripe avocados in a brown paper bag with an apple or banana for two to three days until they are ripe. We do not recommend any other method of ripening avocados.
Why do some avocados don’t ripen?
Properly timing the picking is important, as the only reason that an avocado will not ripen is if it is harvested prematurely or stored improperly, in cool conditions. If an avocado is picked too soon, it has a low oil content and will never ripen sufficiently, remaining inedible and rubbery, with poor flavor.
Why are some parts of my avocado hard?
Picked too early. Avocados are technically ripe when they are mature on the tree, but they are still rock hard. More time spent on the tree results in more oil content in the avocado fruit. They need time off the tree, when picked, for the oils to soften the flesh.
